Cherry Vinaigrette

- 1 Tbsp dried Cherries plus 1 Tbsp add’l cherries for the garnish
- ½ cup of onion, quartered
- 1 clove garlic, roughly chopped
- 3 Tbsps raspberry vinegar
- 2 Tbsps orange juice
- 1 Tbsp honey
- 1/3 cup olive oil
- ¼ tsp salt
- 1/8 tsp pepper
- Mixed Greens, washed and dried
- In a blender or food processor, pulse the cherries, onion and garlic until finely chopped. If using a knife, chop until you have a small dice
- Add raspberry vinegar, orange juice and honey and pulse or stir until combined
- Season with salt and pepper
- Toss with fresh mixed greens and garnish with the remaining dried cherries
