Cherry Vinaigrette

  • 1 Tbsp dried Cherries plus 1 Tbsp add’l cherries for the garnish
  • ½ cup of onion, quartered
  • 1 clove garlic, roughly chopped
  • 3 Tbsps raspberry vinegar
  • 2 Tbsps orange juice
  • 1 Tbsp honey
  • 1/3 cup olive oil
  • ¼ tsp salt
  • 1/8 tsp pepper
  • Mixed Greens, washed and dried
  • In a blender or food processor, pulse the cherries, onion and garlic until finely chopped. If using a knife, chop until you have a small dice
  • Add raspberry vinegar, orange juice and honey and pulse or stir until combined
  • Season with salt and pepper
  • Toss with fresh mixed greens and garnish with the remaining dried cherries
