Baked Walleye in Corn Flakes

  • 2 lbs walleye, or other firm white fish
  • 2 cups corn flakes
  • 1 zip loc bag
  • 1 cup flour
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp water
  • 1 egg
  • Cooking spray
  • Preheat oven to 350 degrees
  • Spray baking dish with cooking spray
  • Put the corn flakes into the zip loc bag and do a rough chop with a rolling pin or your hands
  • For the standard breading procedure, you will need 3 bowls
  • Put the flour, salt and pepper in the 1st bowl
  • Add water and egg to the second bowl and mix with a fork
  • Pour the crushed corn flakes into the 3rd bowl
  • Pat both sides of the fish dry with a paper towel
  • With one hand take the fish and dip in the flour to coat, shaking off any excess
  • Dip the fish into the egg to coat and then lay in the corn flakes dish and use your hand to coat the fish with the cereal
  • Place the coated fish in the baking dish and repeat with the remaining pieces of fish
  • Bake the fish at 350 degrees for approx 25 minutes or until the fish is flaky and the coating is crispy
