  • 1 orange, zested and juiced
  • 1 6 oz can of tomato paste
  • 35 oz crushed tomatoes
  • ¼ cup brown sugar
  • ¼ cup cider vinegar
  • 2 tsp salt
  • ½ tsp black pepper
  • 1 tsp basil, dried
  • 1 ½ lbs ground bison or 90% lean ground beef
  • ½ cup onion, small dice
  • 2 eggs
  • ¼ cup chopped parsley, chopped
  • ½ tsp allspice
  • ¼ tsp ginger
  • 1 package of slider rolls
  • Preheat oven to 375 degrees
  • Zest the orange and squeeze out the juice and put the zest and the juice in a small saucepan and cook over medium heat until reduced by half
  • Combine the tomato paste, tomatoes, brown sugar, vinegar, 1 tsp salt, ½ tsp pepper and the basil in a saucepan
  • Add the reduced orange sauce to the tomato mixture and bring to a boil, then simmer on low heat approx. 15 minutes
  • In a bowl, combine the ground bison, eggs, onion, parsley, allspice, ginger and 1 tsp salt and ½ tsp pepper.
  • Mix the spices into the meat (Using your hands works well)
  • Form the meat into small slider patties the size of the buns you are using
  • Place the patties in a glass baking dish and pour the tomato orange sauce over the patties
  • Cover the baking dish with foil and bake for 25-30 minutes
  • Arrange slider rolls on a platter and place one patty with sauce on each bun
